Our new Chives and Garlic Goat Cheese turns a traditional winter favourite into a light and fluffy, savoury delight – the perfect snack at any time of day.
- 225g self-raising flour
- 55g cold butter, cut into small cubes
- 1tsp baking powder
- 1/2tsp sea salt flakes
- 80g Meredith Dairy - Chives & Garlic Chèvre
- 3 rashes streaky bacon, cooked & chopped
- 2tbsp chopped chives
- 1/2tsp Dijon mustard
- 150ml milk
- Milk & salt for finishing
Line a baking tray with baking paper and heat oven to 200C. Sieve flour into a large mixing bowl with the baking powder and salt.
Add butter and rub into flour with your fingertips, working as quickly as you can until the mixture resembles fine breadcrumbs. Add goat cheese, bacon and chives to the mixture, mix through.
Make a well in the centre of the mixture, and stir in the mustard and enough milk to make a soft, pliable dough. Turn dough onto a floured board, knead very gently until just smooth, and lightly roll out to 2cm thick.
Cut into rounds with a 6cm cutter, place on tray, brush with milk and sprinkle with salt. Place in oven, bake for 15-20 minutes until risen and golden brown. Serve warm.
