    Tomato and Marinated Goat Cheese Omelette

    This omelette comes together in less than 10 minutes and from only from a handful of simple ingredients. Perfect and healthy quick breakfast or lunch, and sure to be a kids' favourite too!

    Serves 1 people

    Ingredients

    • 2 large eggs
    • 1 tbsp of milk
    • 5 cherry tomatoes halved
    • basil leaves
    • 2 cubes of Meredith Dairy Marinated Goat Cheese
    • oil from the cheese jar
    • salt and pepper

    Preparation

    • Step 1 Whisk the eggs together with the milk and season with salt.
    • Step 2 On a low to medium heat, heat up a splash of oil in a frying pan, and then pour egg mix onto the pan.
    • Step 3 After one minute, before egg settles, press tomato halves into the pan cut side up.
    • Step 4 After one more minute, crumble goat cheese on top.
    • Step 5 Cook on low heat until the omelette cooks to your preference.
    • Step 6 Top with basil leaves and pepper.
