Ingredients
- 2 large eggs
- 1 tbsp of milk
- 5 cherry tomatoes halved
- basil leaves
- 2 cubes of Meredith Dairy Marinated Goat Cheese
- oil from the cheese jar
- salt and pepper
Preparation
- Step 1 Whisk the eggs together with the milk and season with salt.
- Step 2 On a low to medium heat, heat up a splash of oil in a frying pan, and then pour egg mix onto the pan.
- Step 3 After one minute, before egg settles, press tomato halves into the pan cut side up.
- Step 4 After one more minute, crumble goat cheese on top.
- Step 5 Cook on low heat until the omelette cooks to your preference.
- Step 6 Top with basil leaves and pepper.
