These quick, perfectly sweet cheese-stuffed dates are the perfect festive appetiser for this entertainment season! Serve this as finger food at your next gathering, either as a started or even a sweet dessert. Dates and Meredith Dairy plain Original Chèvre are a match made in heaven, topped with some warm honey and caramelised pecans.
Serves 6 people
16 fresh medjool dates, pitted and carefully sliced half open
150g Meredith Dairy Original Goat Cheese (in room temperature)
few sprigs of fresh thyme
1/2 cup of pecans, roughly chopped
1/4 cup of brown sugar
1 tbsp of water
3 tbsp of warm honey
Start by caramelising pecans. On a frying pan or skillet, warm up sugar and water, slightly stirring, until the mixture starts to bubble.
Add in pecans, and cover them in sugar, letting caramelise for 2 minutes.
Take pecans off the stove, and spread on a baking paper sheet or metal tray, and leave to cool.
With a teaspoon, stuff split dates with room temperature goat cheese and assemble on a plate.
Sprinkle with fresh thyme leaves, cooled down pecans and drizzle with warm honey!
