    Easy Frittata with Goat Cheese

    This could be called The Anything Frittata, since you could pretty much add anything and come away with a delicious breakfast, lunch or dinner. Any vegetables, ham or sausage are great additions, which make this the perfect meal to empty out your fridge, or get the kids to eat some more veggies. Replace the traditional shredded cheese with our Goat Cheese for a healthier but delicious twist.

    Serves 4 people

    Ingredients

    • 6 eggs
    • 1/2 cup of milk
    • 1 garlic clove minced
    • 2 cups of chopped up veggies of your choice, or optionally can also add ham or meat of choice (we used onion, broccoli, zucchini, spinach and tomatoes)
    • 4 cubes of Meredith Dairy Marinated Goat Cheese
    • salt and pepper
    • 1 tbsp of chopped up parsley

    Preparation

    • Step 1 Preheat your oven to 200C.
    • Step 2 In a bowl, whisk up eggs, milk, minced garlic and a pinch of salt and pepper.
    • Step 3 In an oven-proof skillet or frying pan, heat up a tablespoon of the oil marinade from the cheese jar.
    • Step 4 Fry your veggies on the pan with medium heat till they soften a bit, 5-10 minutes. Season with salt and pepper.
    • Step 5 Turn off the heat. Pour the egg mixture into the pan, and crumble the goat cheese on top. We also added tomatoes and thinly sliced zucchini only in the end on top to decorate.
    • Step 6 Bake in the oven for around 15-20 minutes, or until the edges come off the pan, and the middle has cooked with no raw egg visible.
    • Step 7 Top off with fresh herbs and enjoy.
