    Chorizo & Cherry Tomato Pasta with Goat Cheese

    This pasta works well both as a quick & easy weeknight dinner, or as a main dish for a dinner party. Spicy chorizo pairs perfectly with our Marinated Goat Cheese and fresh cherry tomatoes. The best part - the sauce comes together while you boil and cook the pasta!

    Serves 4 people


    • 2 chorizos (250g)
    • 3 garlic cloves
    • 250g of cherry tomatoes
    • 6 cubes of Meredith Dairy Marinated Goat Cheese
    • 1 tbsp of oil from the Meredith Dairy Goat Cheese jar
    • 400g of linguine
    • Bunch of fresh parsley
    • Bunch of fresh basil
    • Salt and pepper


    • Step 1 Chop the garlic, slice the chorizo into thin slices and halve the cherry tomatoes.
    • Step 2 Place a big pot of water to boil.
    • Step 3 On a frying pan on medium heat, heat up a tbsp of oil from the goat cheese jar, and fry garlic for one minute, then add sliced chorizo and fry for two more minutes.
    • Step 4 Add halved cherry tomatoes. Fry till tomatoes soften and chorizo is crispy and cooked. Season with pepper and a pinch of salt.
    • Step 5 Meanwhile, cook pasta in salty boiling water according to instructions.
    • Step 6 Chop fresh herbs.
    • Step 7 Combine pasta into the sauce, add herbs and toss together.
    • Step 8 Top with crumbled Meredith Dairy Marinated Goat Cheese.
