Sometimes simple is simply the best, and this green salad with the addition of our beautiful Marinated Goat Cheese is the perfect base for your summer barbecues or main dishes. Make sure to pick out the freshest produce to make this salad burst with flavour and colour.
Serves 4 people
200g of mix leaf salad
200g cherry tomatoes
1/2 red onion
1 ripe avocado
Small bunch of basil leaves or herb of your choice
320g of Meredith Dairy Marinated Goat Cheese
3 tbsp of balsamic glaze
1/4 cup of crushed pistachios
salt and pepper
Slice red onion into thin half rings. Put the rings into a small bowl of cold water for 10 minutes to soften the flavour.
Halve cherry tomatoes. Rinse and dry salad mix. Cut avocado in half and slice into thin slices. Cut the cucumber in half lengthwise, and with a spoon, scrape out the seeds. Cut into slices.
Assemble the salad onto a wide flat serving platter. Crumble on top Meredith Dairy Goat Cheese and crushed pistachios. Drizzle with balsamic glaze and infused oil from the jar. Season with salt and pepper.
