    Caprese with Marinated Goat Cheese

    Caprese is one of our summer favourites: a super easy and quick appetiser or side salad to put together. Traditionally made with buffalo mozzarella, our twist on this classic features our Marinated Goat Cheese, which pairs perfectly with sweet fresh tomatoes and basil.

    Serves 4 people


    • 4 big heirloom tomatoes
    • small handful of fresh basil leaves
    • 4-5 cubes of Meredith Dairy Marinated Goat Cheese
    • 2 tbsp of balsamic glaze or vinegar
    • 2 tbsp of extra virgin olive oil
    • pinch of salt and black pepper


    • Step 1 Slice tomatoes into thin slices sideways.
    • Step 2 Assemble tomatoes into a flat salad serving plate into rows or a big circle.
    • Step 3 Layer Marinated Goat Cheese and basil leaves between the tomatoes. Top with balsamic, olive oil and salt and pepper.
