    Green Vegetable Salad with Goat Cheese

    This is an easy & delicious way to get your daily dose of green veggies in, perfectly combined with our Marinated Goat Cheese. It's great as a side for a steak or combined with another lunch salad, and packs some of the summer's best green crunchy veggies.

    Serves 4 people


    • 5-7 cubes of Meredith Dairy Marinated Goat Cheese
    • 1 bunch of broccolini
    • 1 bunch of asparagus
    • 300g of snow peas
    • 1/2 bunch of kale
    • 1/2 lemon
    • 3 tbsp of olive oil
    • 1 1/2 tbsp of white wine vinaigrette
    • pinch of salt and pepper


    • Step 1 Put on a pot of water to boil.
    • Step 2 Chop the ends off the broccolini and asparagus. Chop kale leaves into small bite sized pieces.
    • Step 3 Once boiling, lightly salt the water. Cook broccoli for 2 minutes, then take off with a scoop to a colander and run under cold water to stop cooking.
    • Step 4 Cook asparagus in the boiling water for a minute. Add the snow peas and cook for another minute. Then run both under cold water in a colander.
    • Step 5 Let all veggies dry completely.
    • Step 6 Make the dressing by mixing lemon juice, olive oil, vinaigrette and a pinch salt and pepper in a mixing jar and shake.
    • Step 7 Onto a flat serving plate, assemble kale, and then all other veggies on top.
    • Step 8 Break cubes of Marinated Goat Cheese into big chunks on top of the salad.
    • Step 9 Drizzle the vinaigrette on top. Top with a pinch of black pepper.
