These mini frittatas are the perfect children's lunch or snack! And with only 7 ingredients, they are super simple to make as well, making them the perfect recipe for lunchboxes or dinner.
Serves 4 people
3 Tsp of Olive Oil
2 Red Onions, Chopped
2 Zucchinis, Grated and Squeezed of Excess Moisture
Handful of Chives, Chopped
½ Cup of Milk
50g Meredith Dairy Original Fresh Goat Cheese
Preheat the oven to 180 degrees celsius. Lightly oil a 12-hole cupcake tray and line the bottom of the holes with round pieces of parchment paper.
Heat the olive oil in a medium size pan on medium heat. Add the onion and fry for approximately 15 minutes until caramelised. Add the zucchini and half the chives until heated through and then remove the pan from the heat.
Fill the holes in the tray 3/4 full with the mixture.
Whisk the milk and eggs together in a jug. Pour the mixture into each of the holes until just below the rim, the they will rise when baking.
Crumble the goats cheese and sprinkle remaining chives on top.
Place in the oven and bake for 20 minutes or until a beautiful golden brown on top. Once done, remove from the oven, let cool for 5 minutes before removing to cool on a wire rack for the rest of the time.
