Roasted Pumpkin with Herbs and Goat Cheese

A popular dish which can be served as an appetiser or an entree, roasted pumpkin with our Marinated Goat Cheese is a simple and healthy meal that can be whipped up in no time!

Serves 4 people


  • ½ Medium English Pumpkin (Cut into 1-2 inch Wedges)
  • 3-4 Tbsp of Olive Oil
  • Salt and Pepper
  • 1/2 Tsp. Cumin
  • Dash of Cayenne / Hot Paprika
  • 5 Sprigs of Thyme
  • 60g Meredith Marinated Goat Cheese


  • Step 1 Preheat Oven to 180 degrees Celsius.
  • Step 2 Arrange pumpkin wedges on a baking tray.
  • Step 3 Drizzle with olive oil, salt and pepper, and herbs and spices.
  • Step 4 Bake for 15 mins on side, then 15 minutes on their back, then 15 minutes on the other side until pieces are golden and soft.
  • Step 5 Place slices on a plate and crumble goats cheese on top as well as extra thyme.
