    Lemon Pasta with Goats Cheese and Spinach

    Inspired by the streets of Italy, this staple meal has never look so enticing. Packed with herbs and our Marinated Goats Cheese, this meal will be sure to appeal to the fussiest of eaters.

    Serves 4 people


    • 500g Pasta
    • 115g Meredith Dairy Marinated Goats Cheese
    • 10 Cups Baby Spinach
    • 2 Cups Parsley
    • 1 Cup Coriander
    • 1 Tbsp. Lemon Zest
    • 1 Tbsp. Lemon Juice
    • 1/2 Cup Toasted Walnuts


    • Step 1 Boil water in a large pot with a pinch of salt. Once boiling, add 500g of pasta and cook until al dente.
    • Step 2 Strain pasta and put aside to cool, saving a cup of the pasta water.
    • Step 3 Return the cup of pasta water to the pot. Add 115g of Meredith Dairy Marinated Goat's Cheese to the water, stirring on medium heat.
    • Step 4 Once combined, add pasta, spinach, parsley, coriander, lemon zest and juice.
    • Step 5 Season with salt, and pepper. Sprinkle with walnuts and serve.
