    Green Bean, Bacon & Goat Cheese Salad

    This salad is fresh and zesty, but will fill up your stomach no problem! With the added bits of bacon and goats cheese, it will be hard to stop picking at it after the meal is done.

    Serves 4 people

    Ingredients

    • 3-4 Handfuls of Green Beans
    • 2 Rashes of Bacon
    • 1 Garlic Clove, Minced
    • 1 Tsp of Honey
    • 1 Tbsp of Olive Oil
    • Juice of 1 Lemon
    • 2 Cubes of Marinated Goats Cheese
    • Handful of Pine Nuts, Toasted
    • Salt for Seasoning

    Preparation

    • Step 1 Half fill a medium saucepan with water and place a steamer attachment with lid on top. Bring the water to a boil and add the green beans to the steamer. Remove them after approximately 5 minutes or when the beans are cooked through but still crispy. Rinse with cold water.
    • Step 2 Meanwhile, fry the rashes of bacon in a frying pan over medium heat until crispy. Once they are done, turn off the heat but place the pine nuts in the pan and toast until browned.
    • Step 3 Mix the garlic, honey, olive oil and lemon together in a small bowl until well combined.
    • Step 4 Place the beans on a large plate. Break apart or cut the bacon into pieces and scatter on top. Pour the dressing over the salad, and complete the dish by crumbling the goats cheese on top, along with the pine nuts.
