Ingredients
6 cubes of Meredith Dairy Marinated Goat Cheese
500g watermelon, cut into pieces
1/2 bunch of fresh mint, leaves only
2 tbsp pistachios, roughly chopped
1/2 red onion, peeled, sliced finely
1 tbsp freshly squeezed lemon juice
salt and pepper
Preparation
Step 1
In a small bowl combine red onion, lemon juice and 1 tsp of salt and leave for 15 minutes.
Step 2
Finely shred large leaves of mint, leaving small ones whole.
Step 3
Gently toss watermelon and Meredith Dairy Marinated Goat Cheese together, add shredded mint leaves, leaving small leaves to decorate and then place on a platter.
Step 4
Drain red onion, discarding lemon juice, and scatter with the pistachios and reserved mint leaves over the watermelon salad.
