    Savoury Muffins with Goat Cheese

    These quick and easy to make Savoury Muffins make the perfect snack, with Goats cheese, chorizo, corn and sun-dried tomatoes

    Serves 10 people

    Ingredients

    • Meredith Dairy Marinated Goat Cheese
    • Self raising flour
    • 2x Eggs
    • Milk
    • Yoghurt
    • 125g corn
    • 1 Chorizo
    • 100g Sun-dried tomatoes
    • Vegetable oil
    • Salt and pepper
    • Parsley (optional)

    Preparation

    • Step 1 Preheat oven to 180 degrees fan forced
    • Step 2 Cut up Chorizo into small pieces and pan fry until cooked
    • Step 3 Combine 2 1/2 cups of self raising flour, salt & pepper, corn, sun-dried tomatoes and chorizo in a bowl
    • Step 4 Chop a small amount of fresh parsley and add to the mixture
    • Step 5 In a seperate bowl combine all liquids; 1/2 cup of milk, 1/2 cup of yoghurt, 1/4 cup vegetable oil, 2x eggs - beat until combine
    • Step 6 Once the mixture in combine, add in 2 cubes of our Marinated Goat Cheese, sprinkled into the mixture - stir to combine
    • Step 7 Add the liquids mixture into the dry mixture and fold in until combined
    • Step 8 Add the mixture into muffin pans in a tray, and bake for 25 minutes or until golden brown
