Meredith Dairy Marinated Goat Cheese

Self raising flour

2x Eggs

Milk

Yoghurt

125g corn

1 Chorizo

100g Sun-dried tomatoes

Vegetable oil

Salt and pepper

Preparation

Step 1
Preheat oven to 180 degrees fan forced

Step 2
Cut up Chorizo into small pieces and pan fry until cooked

Combine 2 1/2 cups of self raising flour, salt & pepper, corn, sun-dried tomatoes and chorizo in a bowl

Chop a small amount of fresh parsley and add to the mixture

In a seperate bowl combine all liquids; 1/2 cup of milk, 1/2 cup of yoghurt, 1/4 cup vegetable oil, 2x eggs - beat until combine

Step 6
Once the mixture in combine, add in 2 cubes of our Marinated Goat Cheese, sprinkled into the mixture - stir to combine

Step 7
Add the liquids mixture into the dry mixture and fold in until combined

Step 8
Add the mixture into muffin pans in a tray, and bake for 25 minutes or until golden brown
