    Mini Galette – with Pumpkin and Brussels Sprouts

    Enjoy this delicious pumpkin and brussels sprout galette, made with our fresh chevre. Perfect for lunch and super easy to make!

    Serves 4 people

    Ingredients

    • Puff pastry sheets
    • 1x egg
    • butternut pumpkin
    • 1 cup sliced Brussels sprouts
    • Meredith dairy fresh goats chevre
    • Thyme
    • 2 cloves garlic
    • salt and pepper

    Preparation

    • Step 1 Cut each of your puff pastry sheets into a circle, set aside
    • Step 2 Finely chop Brussels sprouts
    • Step 3 Dice pumpkin into small cubes
    • Step 4 Add butter or oil to a pan, sauté your veggies in a pan with garlic, salt and pepper. Cook for 5 minutes.
    • Step 5 Whisk an egg, and lightly brush onto puff pastry sheets
    • Step 6 Add a thin later of Meredith dairy fresh chevre to the pastry
    • Step 7 Add pumpkin and Brussles sprouts mixture
    • Step 8 Top with fresh thyme
    • Step 9 Fold over edges of pastry
    • Step 10 Bake at 200 degrees for 15-20 minutes, or until golden brown
    • Step 11 Top with some more of our fresh chevre, and enjoy
