The classic Smashed Avo, in cafes or at home, simply isn't it without our Marinated Goat Cheese. Perfect for a make-home brekkie or lunch, this dish is a classic for a reason. Don't forget to top with a drizzle of the garlic & thyme infused oil from the cheese jar to enhance the flavours. This is the only smashed avo recipe you'll ever need!
Serves 4 people
Ingredients
4 cubes of Meredith Dairy Marinated Goat Cheese
2 ripe avocados
4 slices of sourdough bread
handful of baby spinach or rocket (optional)
1 tbsp of fresh herb of your choice (mint, thyme for example)
1 tbsp of lemon juice
pinch of salt and pepper
Preparation
Step 1
Toast the bread in a toaster or oven grill.
Step 2
Peel and smash the avocados in a bowl. Stir in chopped herbs, lemon juice and a pinch of salt and pepper
Step 3
Spread avo smash on toasted bread.
Step 4
Top with crumbled goat cheese, one cube per toast. Drizzle some of the infused oil on top of every toast. If desired, top with spinach or rocket for extra greens.
