The perfect accompaniment for your next BBQ or family dinner, this salad is appropriate for almost any occasion. The sweet and salty charred corn tastes amazing with this zesty and fresh cream dressing. A great option for those two cubes left at the bottom of your jar!
Serves 4 people
4 Cobs of Corn
1 Tbsp of Butter
Salt & Pepper
2 Cubes of Marinated Goat Cheese
3 Tbsp of Mayonnaise
1 Tbsp of Sour Cream
1 Lime, Zested and Juiced
Handful of Coriander, Chopped
2 Spring Onions, Chopped Finely
Heat your BBQ to high-medium heat and prepare your corn by coating with butter, salt and pepper.
Barbecue the corn cobs for approximately 15 minutes or until they are slightly charred.
Meanwhile, prepare your dressing by mixing the goats cheese, mayonnaise, sour cream, lime and coriander in a bowl.
Season with salt & pepper.
Once the corn is cooked, cut off the kernels into a bowl and top with dressing, sliced spring onions and some more fresh coriander leaves.
