These chocolate bites are a rich and indulgent treat! Perfect for a romantic dinner on a warm summer's night. The creamy goats cheese pairs delightfully with the sweet blackberries and chocolate. Plus, they are super easy to whip up any night of the week.

Ingredients
2 x 150g Plain Chevre
3 Tbsp of Honey
2 Tsp Vanilla Extract
½ Cup of Unsweetened Coconut
1 Cup of Smashed Blackberries
1 ½ Cups of Chocolate Chips
3 Tbsp of Unrefined Coconut Oil
Sea Salt
Preparation
Step 1
Beat the goats cheese, honey and vanilla together with an electric mixer until well combined. Add the coconut and beat for another 20 seconds. Gently stir the blackberries through just until they are combined (but not so that all the mixture is purple.)
Step 2
Refrigerate the mixture for 2 hours until it is firm.
Step 3
Roll the mixture into balls (approx. 20) and place on a tray of baking paper. Place the tray in the freezer for 2-3 hours or until frozen.
Step 4
Place the choc chips and coconut oil in a small saucepan on low heat and stir until just melted through. Using your fingers or a fork if too hot, dip the frozen balls in the chocolate and place back on the tray and immediately back into the freezer (before they begin to melt and lose their shape).
Step 5
Keep the chocolates in the freezer until they are set, and store there until 5 minutes before serving. Sprinkle with sea salt or cocoa powder for decoration!
