    Autumn Apple Salad with Maple Vinaigrette

    This delicious salad has all the flavours of fall. Tart apples perfectly compliment the sweet and creamy maple Dijon dressing and salty bites of bacon.

    Serves 2 people


    • 2 Cups Baby Spinach
    • 1/4 Cup Halved Pecans
    • 1/4 Cup Dried Cranberries
    • 2 Tbsp. Meredith Dairy Marinated Goat Cheese
    • 1 Granny Smith Apple, Sliced
    • 2 Slices Bacon, Cooked and Chopped
    • 2 Tbsp. Olive Oil
    • 1 Tbsp. Apple Cider Vinegar
    • 1 Tbsp. Maple Syrup
    • 1 1/2 Tsp. Dijon Mustard
    • Salt and Pepper to taste


    • Step 1 Place baby spinach in a large bowl. Add pecans, cranberries, bacon and Meredith Dairy Marinated Goat Cheese.
    • Step 2 In a jar, add olive oil, apple cider vinegar, maple syrup, dijon mustard, and salt & pepper.
    • Step 3 Secure the lid and shake the jar until well combined.
    • Step 4 Add apple slices to salad bowl and top with half the dressing mixture.
    • Step 5 Combine and enjoy!
