A new take on the classic chèvre and quince paste on crackers. This dish is perfect for entertaining and can be prepared in just minutes.

Ingredients
8 Filo Pastry Sheets
½ Cup of Melted Butter
Thyme Leaves
1 Cup of Grated Parmesan
300g Meredith Dairy Ash Dusted Chèvre
150g of Quince Paste
Ground Pepper
Honey, To Serve
Preparation
Step 1
Preheat the oven to 180 degrees celsius.
Step 2
Lay out a sheet of filo pastry and brush it over gently with melted butter.
Step 3
Sprinkle some of the parmesan, ground pepper, and thyme leaves across the surface. Place another sheet of filo over the top and brush this with butter also.
Step 4
Cut the sheets in 6 even squares.
Step 5
Crumble half a packet of chèvre over the squares in a line from corner to corner. Add a slice or large spoonful of quince paste over the top. Roll the pastry up into a cigar shape with the cheese and quince in the middle.
Step 6
Once rolled, brush again gently with butter and place them on a baking tray lined with parchment.
Step 7
Repeat Steps 2 - 6 with the remaining sheets of filo pastry.
Step 8
Bake filo rolls in the oven for 15 minutes or until browned on top.
Step 9
Once removed from the oven, serve on a plate and drizzle with honey and left over thyme leaves. Makes 24 filo rolls.
