Homemade sweet potato chips are easy to make, and the oven version gets them crispy without having to fry them all in oil. Our soft and crumbly goat cheese is the perfect accompaniment to this healthy snack, and you can use spices of your choosing to season the potatoes.
Serves 2 people
Ingredients
1 sweet potato, washed
1 tsp of paprika powder
1 tsp of garlic powder
salt and pepper to season
3 tbsp of olive oil or vegetable oil of your choice
3 cubes of Meredith Dairy Marinated Goat Cheese
1 tbsp of chopped parley, or other herb (optional)
Preparation
Step 1
Preheat oven into 220 degrees.
Step 2
If your sweet potato has thin skin, you can leave it on for extra flavour, or peel if desired. Chop into sticks longways.
Step 3
In a bowl, toss oil together with the sweet potato, making sure it's all covered. Then add spices, and mix.
Step 4
Spread evenly onto a baking tray lined with baking paper. Try make sure the chips have space on the tray and are not on top of each other to get them all crispy and evenly cooked.
Step 5
Bake in the oven for 10 minutes, then toss them over and bake for another 10-15 minutes until the chips look crispy and are baked all the way through.
Step 6
Serve in a bowl with Meredith Dairy Marinated Goat Cheese crumbled on top, and chopped herb of your choosing sprinkled on top.
