    Roasted Vegetables with Marinated Goat Cheese

    Classic roasted vegetables elevated with our Marinated Goat Cheese

    Serves 4 people

    Ingredients

    • 500g mixed vegetables
    • Meredith Dairy Marinated Goat Cheese
    • 3 cloves of garlic
    • salt and pepper
    • fresh thyme or rosemary

    Preparation

    • Step 1 Preheat your oven to 200 degrees
    • Step 2 Dice your vegetables into 2-3cm pieces
    • Step 3 Add to a lined oven tray and top with the garlic infused oil, chopped garlic, fresh herbs, salt and pepper
    • Step 4 Roast for 20 minutes, stir then cook for another 15 minutes
    • Step 5 Once golden and cooked through, top with the creamy soft goat cheese and enjoy
