Roasted Mushroom, Thyme and Marinated Goats Cheese Crostini
Inspired by Italian cuisine, prepare to be pleasantly surprised by Crostini, an afternoon appetiser consisting of toasted sourdough, roasted mushroom, thyme and Meredith Dairy Marinated Goat Cheese.

Ingredients
2 Portobello Mushrooms, Sliced
6 Swiss Brown Mushrooms, Sliced
250g Meredith Dairy Marinated Goat Cheese
2 Shallots, Diced
2 Cloves of Garlic, Diced
4 Slices of Sourdough Bread
Thyme
1 Tbsp. Olive Oil
Preparation
Step 1
Heat Olive Oil on a fry pan on medium heat. Add shallots and garlic and fry them for a minute, before adding the sliced mushrooms.
Step 2
Sauté on a medium heat until soft and browned, adding thyme leaves at the last minute.
Step 3
Meanwhile, toast the sourdough. Once toasted, spread generously with Marinated Goats Cheese.
Step 4
op bread slices with mushroom mix from the fry pan and top with some more fresh thyme leaves and enjoy!
