    Roast pumpkin and Goat Cheese Salad

    This pumpkin and Goat Cheese salad is delicious, serve with grilled lamb or chicken for a tasty meal

    Serves people

    Ingredients

    • 3 cubes of marinated goat cheese
    • 120g rocket
    • Chopped parsley
    • Toasted pine nuts
    • 2tbs olive oil
    • 1tbs balsamic vinegar
    • 300g kent pumpkin
    • 1tsp paprika
    • 1tsp Oregano
    • Salt and pepper

    Preparation

    • Step 1 Preheat oven to 200 degrees
    • Step 2 Place chopped pumpkin on an oven tray, drizzle with olive oil and add oregano, paprika, salt and pepper
    • Step 3 Cook for 15 minutes or until golden brown
    • Step 4 Add rocket, parsley, pine nuts and pumpkin into a salad bowl
    • Step 5 Add olive oil and balsamic vinegar dressing, then top with goat cheese
