This yoghurt bark took only 15 minutes to prepare, so it's perfect for the busy mother. And not only that, but it's an absolute winner with the kids, and healthy too!
Serves 6 people
Ingredients
1kg Meredith Dairy Traditional Greek Yoghurt
½ Cup of Melted Honey
½ Cup of Desiccated Coconut
1/3 Cup of Dried Cranberries
½ Cup of Chopped Pistachios
1 Punnet of Raspberries, Chopped
Preparation
Step 1
Combine the yoghurt, coconut and honey in a large jug.
Step 2
Lay baking paper over the base of a rectangular, flat baking tray and lightly grease with olive oil.
Step 3
Pour the mixture into the tray in an even layer.
Step 4
Sprinkle the cranberries, pistachios and raspberries on top of the yoghurt.
Step 5
Place in the freezer for a couple of hours until frozen solid.
Step 6
Remove from the freezer, cut or break into pieces and enjoy!
