These delicious baked breads are the perfect breakfast or lunch option, especially when serving a large crowd. They are extremely simple to make, and the combination of the eggs, goat cheese and herbs is the ultimate comfort food.

Ingredients
1 Baguette (Preferably Sourdough)
3 Eggs
1 Tbsp of Thickened Cream
Salt & Pepper
Handful of Chives, Chopped Fine
Handful of Basil, Chopped
1 Lemon, Zested
75g of Meredith Dairy Original Chevre
Olive Oil, To Drizzle
2 Cups of Rocket
Preparation
Step 1
Heat your oven to 180 degrees celsius.
Step 2
Prepare your baguette by cutting an oval along the top side and pulling out the bread from the middle, leaving a boat shape.
Step 3
Whisk your eggs, cream and salt & pepper together in a bowl. Add the chopped herbs and finally the lemon zest.
Step 4
Stuff the baguette with the rocket, and then pour the egg mixture over the top.
Step 5
Spread crumbled goats cheese over the top and drizzle with olive oil.
Step 6
Bake for 25 minutes or until browned and egg is cooked.
