    Couscous and Goat Cheese Salad

    A light and tasty salad, perfect for summer bbq's!

    Serves 4 people

    Ingredients

    • 1 cup Pearl Couscous
    • Meredith Dairy Marinated Goat Cheese
    • Cherry tomatoes
    • Cucumber
    • Fresh dill
    • Chopped spinach

    Preparation

    • Step 1 Add 1 cup of pearl couscous into boiling water until cooked, let cool for 5-10 mins
    • Step 2 Dice tomatoes, cucumber and spinach
    • Step 3 Combine the couscous, spinach, cucumber, tomatoes, dill to a bowl
    • Step 4 Top with Meredith Dairy Marinated Goat Cheese, drizzle some of the garlic infused oil
