    Chorizo Couscous with Marinated Goats Cheese

    This Chorizo Couscous salad is a perfect addition to your summer bbq - made with our Marinated Goats Cheese

    Serves 4 people

    Ingredients

    • Pearl Couscous
    • Onion
    • Mint
    • Chorizo
    • Harissa
    • Meredith Dairy Marinated Goats Cheese

    Preparation

    • Step 1 In a pan, add oil and roughly chopped onions.
    • Step 2 Once cooked, add in 1 cup of Pearl Couscous and stir
    • Step 3 Add 2 cups of water and simmer on low heat until water has absorbed
    • Step 4 While cooking the Couscous, cut chorizo into small pieces and fry in a pan until cooked
    • Step 5 Add Harissa and salt for flavour to the Couscous
    • Step 6 Add Couscous to a bowl, add Chorizo and fresh mint
    • Step 7 Finally add your Meredith Dairy Marinated Goats Cheese, and drizzle some of the oil over the top. Enjoy!
