    Chicken, Couscous & Goat Cheese Salad

    A creamy, fresh, chicken and pearl couscous salad topped with our Marinated Goat Cheese

    Serves 3-4 people

    Ingredients

    • 3 chicken thighs
    • Greek seasoning (we used @mingleseasoning)
    • 4 cubes of marinated goat cheese
    • ¾ cup pearl couscous
    • ¼ cup diced red onion
    • ⅓ cup sun-dried tomatoes, chopped
    • ¼ cup chopped parsley
    • 2 tbsp olive oil
    • Salt & pepper

    Preparation

    • Step 1 Season the chicken thighs with the Greek seasoning.
    • Step 2 Heat the olive oil in a pan over medium heat and cook the chicken for around 15 minutes, or until golden and cooked through.
    • Step 3 Bring a saucepan of water to the boil. Add the pearl couscous and cook according to the packet instructions. Drain and allow to cool.
    • Step 4 In a large bowl, combine the cooled couscous, cucumber, red onion, sun-dried tomatoes, parsley, and 3 cubes of the marinated goat cheese.
    • Step 5 Season with salt and pepper, then gently toss everything together.
    • Step 6 Slice the chicken and serve it over the salad.
    • Step 7 Finish with the remaining cube of marinated goat cheese, crumbled over the top. Enjoy!
