These pizzas are perfect for a Christmas party. The sweet, fresh cherries are a delicious addition for these hot summer days, and are also very on theme!

Ingredients
4 Cups of Plain Flour
1 ½ Cups of Warm Water
1 x 7g Sachet of Dry Yeast (or 2 Tsp)
2 Tsp of Salt
1/3 Cup of Olive Oil
2 Tsp of Caster Sugar
10 Slices of Pancetta
1 Fresh Mozzarella Ball
2 Cups of Pizza Cheese
2 Handfuls of Cherries, halved and pitted
2 Handfuls of Rocket
Salt & Pepper
Preparation
Step 1
To make the pizza dough, combine the warm water, caster sugar and yeast in a bowl. Leave to the side for 5 minutes.
Step 2
Place flour and salt in a large bowl and mix well. Make a well in the centre and add the olive oil and yeast mixture. Use a rounded knife to cut the mixture together until mostly combined. Then use your hands to bring together and knead on a slightly floured surface for about 10 minutes. The dough should be smooth and soft by the end.
Step 3
Put dough in a greased bowl and cover with cling wrap. Leave in a warm place to proof for about 30 minutes to an hour until it doubles in size.
Step 4
Punch down your dough and knead for another couple of minutes until soft and smooth. Split into 6 pieces and roll each on out into a roughly circular shape.
Step 5
Preheat your BBQ. Oil one side of your dough and place this side on the BBQ for about 1 minute until nicely charred. Then, remove from the BBQ and place the mozzarella slices, pizza cheese, pancetta, cherries and salt and pepper on the cooked side. Place the pizza back in the BBQ with the uncooked side down for another 2 minutes until the bottom is nicely cooked and the cheese melted on top. Make sure you have the BBQ lid down during this time. Otherwise, you can place in the oven at 220 degrees for 10 minutes.
Step 6
Garnish with rocket and goat cheese before serving.
