    Caramelised Onion & Goat Cheese Tart

    This onion tarte tatin is the perfect quick working-from-home lunch or dish to bring to the weekend family gathering! It took only 15 minutes to prepare and you probably already have everything in the cupboard.

    Serves 4 people

    Ingredients

    • 4 Brown Onions
    • 1 Tbsp Olive Oil
    • 1 Tbsp Butter
    • Sprig of Fresh Rosemary, Chopped
    • 2 Tbsp Balsamic Vinegar
    • 2 Tbsp Soy Sauce
    • 1.5 Tbsp Sugar
    • 500g Frozen Puff Pastry
    • 2 Cubes of Meredith Dairy Marinated Goat Cheese

    Preparation

    • Step 1 Preheat oven to 180 degrees celsius.
    • Step 2 Peel the onions and chop into 1cm thick rounds. Heat olive oil and butter in a large frying pan that you can put in the oven. Place onion rounds in lying face down and fry until soft and browned.
    • Step 3 Add soy sauce, rosemary, balsamic vinegar and sugar to the pan. Continue frying until caramelised.
    • Step 4 Take two sheets of frozen pastry and cut to the shape of the pan. Place on top of the onion mix and remove from the stovetop, and place in the oven.
    • Step 5 Bake for 15 minutes or until the pastry is browned.
    • Step 6 Flip out onto a serving dish and crumble goats cheese over the top.
    • Step 7 Serve!
