1 whole chicken, butterflied
Diced potatoes
Roast chicken seasoning
Oil from the marinated goat cheese
Fresh thyme
1 lemon, sliced
Marinated goat cheese
Preparation
Step 1
Preheat the oven to 190°C.
Step 2
Add the butterflied chicken and diced potatoes to a baking dish.
Step 3
Season the chicken generously, then drizzle the goat cheese oil over the chicken and potatoes.
Step 4
Scatter over the thyme and tuck the lemon slices around the dish.
Step 5
Roast for 50–55 minutes, or until the chicken is cooked through and the potatoes are golden.
Step 6
Crumble over the marinated goat cheese and serve with a fresh salad.
