This colourful winter salad is light and refreshing full of deep flavour. Marinated Goat Cheese and beetroot are a match made in heaven, and the cheese marinade makes for the perfect easy dressing.
Serves 4 people
Ingredients
1 orange
1 beetroot, boiled
250g spinach
small handful of walnuts
4 cubes of Meredith Dairy Marinated Goat Cheese (and a drizzle of marinade oil from the jar)
salt and pepper
Preparation
Step 1
Slice orange into thin slices. Cut the peels off from the edges. Slice a cool beetroot into thin slices.
Step 2
Assemble spinach on a flat serving platter. Place beetroot and orange slices on top.
Step 3
Roughly chop walnuts and sprinkle on top, and finish with a generous drizzle of cheese marinade oil. Season with salt and pepper.
