This delicious salad has all the flavours of fall. Tart apples perfectly compliment the sweet and creamy maple Dijon dressing and salty bites of bacon.

Ingredients
2 Cups Baby Spinach
1/4 Cup Halved Pecans
1/4 Cup Dried Cranberries
2 Tbsp. Meredith Dairy Marinated Goat Cheese
1 Granny Smith Apple, Sliced
2 Slices Bacon, Cooked and Chopped
2 Tbsp. Olive Oil
1 Tbsp. Apple Cider Vinegar
1 Tbsp. Maple Syrup
1 1/2 Tsp. Dijon Mustard
Salt and Pepper to taste
Preparation
Step 1
Place baby spinach in a large bowl. Add pecans, cranberries, bacon and Meredith Dairy Marinated Goat Cheese.
Step 2
In a jar, add olive oil, apple cider vinegar, maple syrup, dijon mustard, and salt & pepper.
Step 3
Secure the lid and shake the jar until well combined.
Step 4
Add apple slices to salad bowl and top with half the dressing mixture.
