    Slow roasted lamb with goat cheese

    Delicious greek style roast lamb with chips, pita and salad - topped with our marinated goat cheese

    Serves 3-4 people

    Ingredients

    • 600g rolled lamb leg roast
    • 2 tbsp olive oil
    • 3 garlic cloves, minced
    • 1 tbsp dried oregano
    • Zest and juice of 1 lemon
    • 1 tsp smoked paprika
    • ½–1 cup beef stock
    • Salt and cracked black pepper, to taste
    • Crispy hot chips
    • Greek salad
    • Pita pockets
    • Marinated Goat Cheese

    Preparation

    • Step 1 Preheat the oven to 170°C.
    • Step 2 Rub the lamb with the olive oil, garlic, oregano, smoked paprika, lemon zest, lemon juice, salt and pepper.
    • Step 3 Place the lamb into a roasting dish and pour the beef stock around the base. Cover tightly with foil.
    • Step 4 Roast for 1½ hours, or until the lamb is tender.
    • Step 5 Remove the foil and roast for a further 15 minutes until lightly golden.
    • Step 6 Rest the lamb for 10 minutes before slicing or shredding.
    • Step 7 Fill each bowl with crispy hot chips, then top with the tender lamb, the fresh Greek salad made with cos lettuce, tomatoes, red onion and Kalamata olives, warm pita bread and the marinated goat cheese.
