    Butterflied Roast Chicken with Goat Cheese

    Such a simple and easy meal to make that the whole family will love! This butterflied roast chicken, with crispy potatoes and our marinated goat cheese.

    Serves 4 people

    Ingredients

    • 1 whole chicken, butterflied
    • Diced potatoes
    • Roast chicken seasoning
    • Oil from the marinated goat cheese
    • Fresh thyme
    • 1 lemon, sliced
    • Marinated goat cheese

    Preparation

    • Step 1 Preheat the oven to 190°C.
    • Step 2 Add the butterflied chicken and diced potatoes to a baking dish.
    • Step 3 Season the chicken generously, then drizzle the goat cheese oil over the chicken and potatoes.
    • Step 4 Scatter over the thyme and tuck the lemon slices around the dish.
    • Step 5 Roast for 50–55 minutes, or until the chicken is cooked through and the potatoes are golden.
    • Step 6 Crumble over the marinated goat cheese and serve with a fresh salad.
