Ingredients

3 chicken thighs

Greek seasoning (we used @mingleseasoning)

4 cubes of marinated goat cheese

¾ cup pearl couscous

¼ cup diced red onion

⅓ cup sun-dried tomatoes, chopped

¼ cup chopped parsley

2 tbsp olive oil

Salt & pepper
Preparation

Step 1
Season the chicken thighs with the Greek seasoning.

Step 2
Heat the olive oil in a pan over medium heat and cook the chicken for around 15 minutes, or until golden and cooked through.

Bring a saucepan of water to the boil. Add the pearl couscous and cook according to the packet instructions. Drain and allow to cool.

In a large bowl, combine the cooled couscous, cucumber, red onion, sun-dried tomatoes, parsley, and 3 cubes of the marinated goat cheese.

Season with salt and pepper, then gently toss everything together.

Step 6
Slice the chicken and serve it over the salad.

Finish with the remaining cube of marinated goat cheese, crumbled over the top. Enjoy!
