Ingredients

1/4 cup Arborio Rice

4 cups of chicken or vegetable stock

Basil Pesto (homemade or store bought is fine)

1 brown onion diced

3 garlic cloves diced

Meredith Dairy Whipped Goat Cheese

2 tbs pine nuts

Fresh basil (to garnish)

salt and pepper
Preparation

Step 1
Add onion and garlic into a pan with oil and sauté

Step 2
Once golden add the rice and cook on medium heat for 3-4 minutes

Step 3
Add the stock one cup at a time, stir until the liquid has evaporated. Repeat this process 4 times for about 25-30 minutes

Step 4
Once the rice has cooked through stir in the pesto and pine nuts

Step 5
Season with salt and pepper, and garnish with basil. Top with our Whipped goat cheese and enjoy
