    Pesto and Goat Cheese Risotto

    Creamy and delicious Pesto and Goat Cheese Risotto

    Serves 4 people

    Ingredients

    • 1/4 cup Arborio Rice
    • 4 cups of chicken or vegetable stock
    • Basil Pesto (homemade or store bought is fine)
    • 1 brown onion diced
    • 3 garlic cloves diced
    • Meredith Dairy Whipped Goat Cheese
    • 2 tbs pine nuts
    • Fresh basil (to garnish)
    • salt and pepper

    Preparation

    • Step 1 Add onion and garlic into a pan with oil and sauté
    • Step 2 Once golden add the rice and cook on medium heat for 3-4 minutes
    • Step 3 Add the stock one cup at a time, stir until the liquid has evaporated. Repeat this process 4 times for about 25-30 minutes
    • Step 4 Once the rice has cooked through stir in the pesto and pine nuts
    • Step 5 Season with salt and pepper, and garnish with basil. Top with our Whipped goat cheese and enjoy
