3 cubes of marinated goat cheese

120g rocket

Chopped parsley

Toasted pine nuts

2tbs olive oil

1tbs balsamic vinegar

300g kent pumpkin

1tsp paprika

1tsp Oregano

Salt and pepper
Preparation

Step 1
Preheat oven to 200 degrees

Step 2
Place chopped pumpkin on an oven tray, drizzle with olive oil and add oregano, paprika, salt and pepper

Cook for 15 minutes or until golden brown

Add rocket, parsley, pine nuts and pumpkin into a salad bowl

Add olive oil and balsamic vinegar dressing, then top with goat cheese
