2 cups fresh basil

1 shallot

2 cloves of garlic

1/4 cup pine nuts

2 tsp salt

1/3 cup olive oil

40g goats chèvre

1/4 cup parmesan grated

Cherry tomatoes (optional)
Preparation

Step 1
Blend basil, shallot, garlic, pine nuts, salt and olive oil until combined

Step 2
Cook your pasta of choice, set aside

Step 3
Add the fresh pesto to a pan, add pasta and a small amount of pasta water

Step 4
To serve sprinkle extra goats chèvre and parmesan cheese

Step 5
Add fresh cherry tomatoes and basil
