This late summer salad is perfect for entertaining and balances sweet and savoury in an irresistible combination! Peaches release beautiful full flavour when grilled. Sprinkle some roasted nuts and honey vinaigrette on top and enjoy!
Serves 4-6 people
Ingredients
2 peaches
1 punnet of blueberries
250g bag of rocket
handful of roasted nuts (we used walnuts)
2 tsp of white vinegar
1 tbsp of honey
salt and pepper
150g of Meredith Dairy Original Fresh Goat Cheese
Preparation
Step 1
Slice each peach into 6 slices. Heat up a lightly greased griddle frying pan or skillet. Fry peaches on low to medium heat for 1-2 minutes each side, or until softened with faint grill marks. Don't fry for too long as they will burn. Put aside to rest.
Step 2
Arrange rocket on a wide serving plate. Top with peaches, berries and roasted nuts.
Step 3
Crumble Meredith Dairy Original Fresh Goat Cheese on top in big chunks.
Step 4
In a jar, whisk together vinegar, honey and a pinch of salt and pepper. Drizzle on top and serve.
